Training can be dull, boring, and ineffective….   Is yours? Or is it interesting, engaging, and powerful! The whole point of training is to either teach your team new skills, or refresh and enhance their skills to bring them to a new level; additionally, getting them pumped up and excited about it is a must. So, the first thing we need to ask is, what is it exactly that we want to achieve; and then, lay all out on paper, with steps to achieve those goals. Secondly, and more importantly, what do you think is important to the team? You have to find that connection, and really engage them if you want them to fully embrace the concept and really understand what you're trying to teach them. Why should they learn this? How will it improve their lives? In other words, “what’s in it for me?” If they're just sitting in a classroom staring out of the window and dreaming of being on the beach in the Bahamas, then you have lost the group, and there's really no point in doi...

So, what is the deal with all the talk about the local, so called farm-to-table, style that is currently en vogue? What does it mean to eat locally? Opinions of what “local food” is differ but here are the essentials. Terroir - Terroir comes from the Latin root meaning “earth” and refers to the earth where food is grown. Literally, the “taste of the earth” Terroir is a term generally used for wine and although not generally thought of in food, actually plays a large part when talking about the local tastes. This is very evident in food, due in large part to varying climates, or micro-climates, soil types, water quality, nutrients, and populations. Most often we do not taste this due to the fact that we have year-round demand for everything. We are trained to want strawberries and peaches in the winter, winter squashes in the summer, and tomatoes all year long! The result is food that severely lacks its original flavor. Most people don’t even know what a real tomato...

Hand Crafted Cocktails

How the Craft Cocktail Culture can increase revenues: We hear a lot of craft cocktail questions. What are they exactly? What does that mean? Is it a fad that will go away? I actually see it becoming even bigger as more and more locations understand the impact they have on their overall operation. People got bored with the old stand-by cocktails like a Cosmopolitan, Lemon Drop, or Margarita. These drinks generally have lots of vodka, are sweet and colorful with fancy names, but light on flavor! Educated and adventurous guests are seeking out more depth and refinement in their glass. Bars that are passionate about real crafted cocktails can show a dramatic increase in traffic, both in food and beverage areas. Having a strong Craft Cocktail Culture demonstrates your passion for the authentic and for flavor. It shows to the world that you take your business seriously. This is how restaurants develop a solid reputation; people do talk and will recommend your establishment based...
